Is it ok to can beets that have gone soft?

I have beets from my garden that I picked a couple days ago. I intended to pickle and can them but haven't had the chance to do it yet. The beets have gone a bit soft but are not spoiled or moldy. Is it still safe to can them?


Perfectly safe - they're just slightly past their best, that's all. Try soaking them in cold water for several hours and see if you can perk them up again before you can them.


Just cut away the soft bits and pickle them as you normally would. They will be fine.


they will be fine just process as normal , the vinegar will perk them up. Beets from store are more than two days old as a rule.
