Einaudi's music is like some kind of pop-minimalism, so no classical composer will be quite so easy on the ears, but you could give these guys a shot:
Phillip Glass - I'm not overly familiar with his works so I won't recommend one, but browse around.
John Adams - Phrygian Gates maybe?
Steve Reich - Music for 18 Musicians
Again, these won't be as tuneful as Einaudi, but they're the same kind of mood setting music.
Einaudi's music is not classical. It is instrumental pop. Therefore, by definition, there is no music applicable to this category which is like his.
